Cool Cucumber Soup

A chilled cucumber soup recipe for summer. Cooling cucumbers combine with fresh dill, onions and garlic for a smooth creamy cold cucumber soup that is vegetarian, vegan, and very refreshing.

Ingredients:

  • 2 tsp vegetable oil
  • 5 cucumbers, chopped
  • 3 cloves garlic
  • 2 onions, diced
  • 2 1/2 cups vegetable broth
  • 1/4 cup chopped fresh dill
  • pepper to taste
  • 1 cup soy milk

Preparation:

In a large saucepan, heat the oil over medium heat and sautee the cucumbers, garlic, and onions until onions are transparent, about 6 minutes. Add the broth and simmer until the cucumber is soft, about 15 to 20 minutes.

Remove the soup from the heat and transfer to a blender or food processor and blend until smooth. While the mixture is still warm, stir in the dill and season with pepper.

Chill. Stir in the soy milk just before serving.

Fat-free Cucumber Dressing

Use fat-free yogurt to make this cool cucumber fat-free salad dressing. Super quick, super easy and super healthy!

Ingredients:

  • 1/2 cucumber, peeled
  • 3/4 cup plain fat-free yogurt
  • 5 fresh mint leaves
  • 1/2 tsp lemon juice
  • 3 ice cubes

Preparation:

Process all ingredients in a food processor or blender until smooth.

Serving size: 2 tablespoons

One serving fat-free cucumber dressing provides approximately:

Cucumber and Hummus Sandwich

In his recent book Prevent and Reverse Heart Disease, Dr. Caldwell B. Esselstyn shares this healthy and high-fiber recipe for a vegetarian and vegan hummus and cucumber sandwich. Dr. Esselstyn recommends using a no-tahini hummus in this recipe.

Ingredients:

  • whole grain bread
  • no-tahini hummus
  • cucumber slices
  • chopped fresh parsley or cilantro
  • roasted red peppers

Preparation:

Toast whole-grain bread and spread with lots of no-tahini hummus.

Cover no-tahini hummus with a layer of peeled cucumber slices, slightly overlapping.

Sprinkle chopped parsley or cilantro over sliced cucumbers. Top with roasted red peppers.

Dr. Esselstyn says, "This is a little messy to eat, but worth the drips! Roasted red pepper all by itself is also good."
