Homemade tomato soup recipes

Judging from each week's most popular resources here on about.com, lots of people like vegetarian soups! Whether it's raw food soups, or bean soups, there's plenty of options if you're looking for something soothing to slurp.

Last week, I added a new option to the list - tomato soup, collecting all of my favorite tomato soup recipes in one place right here. When fresh and homemade, tomato soup is a great way to make sure you're getting your 5 servings of fresh fruits and vegetables every day.

Tomato and barley vegetable soup

If you're looking for a nourishing beef-free barley soup recipe, most recipes use mushrooms to pair with the barley, but this meatless barley soup uses tomatoes and the standard soup ingredients of carrots, celery, onions and garlic to carry the flavor. There's little additional seasoning, so this tomato soup recipe is simple, easy, and nourishing.

Ingredients:

  • 1 tbsp olive oil
  • 2 ribs celery, chopped
  • 2 medium carrots, chopped
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups good quality vegetable broth
  • 1 16-ounce can diced tomatoes (do not drain)
  • 1 cup pearl barley
  • 1/2 tsp Italian seasoning
  • 2 cups spinach leaves (optional)
  • salt and pepper

Preparation:

In a large soup or stock pan, heat onions and garlic for a minute or two, then add carrots and celery. Heat for 4-5 minutes, to start vegetables cooking.

Add tomatoes (do not drain), vegetable broth, barley and Italian seasoning, stirring to combine. Bring to a boil, cover, then reduce to a medium-low simmer.

Cook for 30-40 minutes, or until barley is cooked and carrots are soft. Stir in spinach, heat for one more minute, then turn off heat. Season generously with salt and pepper.

Chilled tomato soup

A simple cold tomato soup similar to a Spanish gazpacho and perfect for lunch when it's hot out. Prepare it in advance and keep it chilled to bring to work the next day. Made with fresh tomatoes and basil, this is a simple, understated soup with little added flavor, so be sure to use the freshest and best-quality tomatoes you can find.

Sun Dried Tomato Hummus

Adding sun-dried tomatoes to a homemade hummus recipe adds a bit of texture and color, and a whole lot of flavor. Making homemade hummus is so easy - just dump everything in the blender or food processor, and process until it's smooth. Hummus is a naturally vegetarian and vegan food.

Ingredients:

  • 1 15 ounce can chickpeas, drained (garbanzo beans)
  • 1/4 cup olive oil
  • 1/4 cup sun-dried tomatoes in oil or rehydrated
  • 2 tbsp lemon juice
  • 3 cloves garlic
  • 1/2 tsp paprika
  • 2 tbsp water
  • 1/4 tsp salt

Preparation:

Process all ingredients in a food processor or blender until smooth, adding more liquid if needed. That's it! Enjoy your homemade hummus.

If you prefer, you can also add the sun-dried tomatoes last, and process the hummus until the tomatoes are finely diced rather than completely smooth. This will give your hummus a bit of extra texture, if you prefer.
