Vegan classics: Chocolate chip cookies

Vegan chocolate chip cookies, just like everyone should have when they're kids! By using dairy-free chocolate chips, a basic egg substitute and vegan margarine in place of butter, it's really unliekly that you'll even be able to taste the difference. This recipe is quite versatile as well. One reader left a comment saying "I sub out the margarine for applesauce, the egg substitute for flaxseed and water, and use half the brown sugar. Dough comes out well for me." Enjoy these homemade vegan chocolate chip cookies!

Pumpkin cookies for a girls' night in!

Last week, I went to visit a few old friends, and the four of us had a lovely girl's night, complete with plenty of wine, catching up (gossip!), and these beautiful chocolate pumpkin cake mix cookies. After our day full of pedicures, yoga and shopping, of course! The cookies were in the oven quick enough that I didn't miss any of the wine and conversation, and they went quite well with our Chilean carmenere. I'll admit, I munched them again the next morning along with my coffee. Lovely to see you again, Jen and Shanna, enjoy the leftovers!

Easy Pumpkin Cake Mix Cookies

Pumpkin cookies - made from cake mix! If you're a fan of quick and easy recipes, then this is low-fat cookie recipe is a keeper. With just a box of cake mix and a can of pumpkin, you can have fresh warm cookies to munch on while you carve up those Halloween jack-o-lanterns! The perfect fall treat. Use a vegan cake mix for vegan cookies. Or try this basic recipe for cake mix cookies or try making vegan cake mix cookies.

Ingredients:

  • 2 boxes vegan spice cake mix
  • 1 29 ounce can pumpkin
  • 2 cups chocolate chips (optional)

Preparation:

Pre-heat oven to 350 degrees.

Mix together all ingredients. Drop by spoonfuls onto a baking sheet.

Bake for 10 to 12 minutes, or until cookies are done.

Peanut Butter No Bake Cookies

Looking for an easy no-bake cookie recipe with peanut butter and chocolate chips? Look no further! These quick and easy peanut butter no-bake cookies are perfect for when the kids want to help out in the kitchen. To make vegan no-bakes, just be sure to use non-dairy chocolate chips and vegan margarine. Enjoy your cookies!

Ingredients:

  • 1 cup peanut butter
  • 1 3/4 cup powdered sugar
  • 1/4 cup margarine, melted
  • 2 1/4 cups corn flakes
  • 1/2 cup chocolate chips (optional)

Preparation:

Crush the corn flakes in a zip-lock bag.

Combine all the ingredients together.

Roll into balls and chill before serving.

Sugar-Free Carob Chip Cookies

A vegan and sugar-free cookie recipe using carob chips instead of chocolate chips for a healthy refined sugar-free treat. Make sure your carob chips are also sugar-free. Ingredients:

  • 1 banana, mashed
  • 3/4 cup brown rice syrup
  • 1/4 cup soy milk
  • 1/4 cup vegetable oil
  • 3 cups flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 cups carob chips

Preparation:

Pre-heat oven to 325 degrees.

Combine the banana, brown rice syrup, soy milk and vegetable oil and whisk until well combined.

In a separate bowl, combine the flour, salt, baking powder and baking soda.

Add to banana mixture, stirring well to combine.

Fold in carob chips.

Drop by spoonfuls onto a baking sheet. Bake for 10-12 minutes or until lightly golden brown.
