Vegan Chocolate Chip Scones

Vegan Chocolate Chip Scones

Ingredients:

  • 2 cups flour
  • 5 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 6 tbsp vegan margarine, cut into pieces
  • 1 1/2 cups chocolate chips
  • 1/3 cup soy milk
  • Egg replacer for 2 eggs

Preparation:

Pre-heat the oven to 400 degrees.

In a large bowl, combine the flour, 3 tablespoons of the sugar, baking powder and the salt. Cut in the vegan margarine. Stir in the chocolate chips.

In a separate bowl, whisk together the soy milk and egg replacer. Combine with dry ingredients, and stir until dough forms.

Place on a floured surface and knead a few times, then roll out into a circle about 2 inches thick. Slice like a pizza or a pie into 8 triangles.

Place the triangles on a baking sheet and sprinkle with the remaining sugar.

Bake 20-25 minutes until lightly golden.

Vegan chocolate shake

A vegetarian and vegan protein shake or smoothie inspired by the flavors of Mexican chocolate! With the addition of tofu for protein and flax oil for those Omega-3s, this is the perfect chocolate shake for vegans. Yum!

Ingredients:

  • 4 ounces melted bittersweet dark chocolate
  • 2 cups soy milk
  • 1 banana
  • 12 ounces silken style soft tofu
  • 1/2 tablespoon flax seed oil
  • 1 teaspoon cinnamon powder

Preparation:

Place ingredients in blender and mix things up for 1 minute on medium.

Pour into tall cups, serve and do the samba or tango with your love.

Vegan classics: Chocolate chip cookies

Vegan chocolate chip cookies, just like everyone should have when they're kids! By using dairy-free chocolate chips, a basic egg substitute and vegan margarine in place of butter, it's really unliekly that you'll even be able to taste the difference. This recipe is quite versatile as well. One reader left a comment saying "I sub out the margarine for applesauce, the egg substitute for flaxseed and water, and use half the brown sugar. Dough comes out well for me." Enjoy these homemade vegan chocolate chip cookies!

Vegan Chocolate Protein Shake

Look for a high-protein milkshake or a healthy vegan protein shake recipe? If you like chocolate milkshakes, try this protein-packed version with cashews, a banana and soymilk. This recipe is for one chocolate protein shake. All natural, and all-vegan!

Ingredients:

  • 1 cup soy milk
  • 1 banana
  • 1-2 tbsp sweetened cocoa
  • 2 tbsp cashew nuts

Preparation:

Blend together all ingredients in a blender until smooth and creamy. Makes one vegan chocolate protein shake. w

Easy Chocolate Chip Biscotti

Homemade biscotti made with mini-chocolate chips. Never made homemade biscotti before? Not to worry, this biscotti recipe is simple and easy to follow. Biscotti is baked twice to get it perfectly crisp and crunchy.

Ingredients:

  • 2 cups all-purpose flour
  • 2/3 cup sugar
  • 1 teaspoon baking soda
  • 1/2 tsp salt
  • 1/2 cup mini chocolate chips
  • 3 eggs, lightly beaten
  • 1 tsp vanilla

Preparation:

Pre-heat oven to 350 degrees.

In medium bowl, mix together flour, sugar, baking soda, salt and chocolate chips. Add eggs and vanilla, stirring until blended. Turn dough onto lightly floured surface; knead 8 to 10 times. Form dough into a log about 2-inches wide and 16-inches thick.

Place log onto baking sheet coated with non-stick spray. Bake 30 minutes; remove from oven and cool for 10 minutes.

Place log on cutting board and with a serrated knife, cut log diagonally into 1/2 inch slices, using a sawing motion. Place slices cut side up, on baking sheet.

Reduce heat to 325 degrees and bake for 10 minutes. Turn slices over and bake an additional 10 to 12 minutes until golden. Centers will be slightly soft, but will harden as they cool. Remove to wire rack to cool.

Servings: 2 dozen

Calories/Serving: 92

Nutrition: One biscotti provides approximately: 92 calories, 2 g protein, 17 g carbohydrates, 1 g fiber, 2 g fat (1 g saturated), 27 mg cholesterol, 19 mcg folate, 1 g iron, 109 mg sodium.

Chocolate Pudding Cake

A moist, sticky and gooey vegan chocolate pudding cake recipe. With no egg replacer, this is also a great vegan and dairy-free recipe if you don't have any egg replacer on hand.

Ingredients:

  • 1 cup flour
  • 1 cup sugar
  • 1/2 cup cocoa powder
  • 2 tsp baking powder
  • 1/2 cup soy milk
  • 2 tbsp vegetable oil
  • 1/2 cup chopped walnuts (optional)
  • 1 1/4 cups hot water

Preparation:

Pre-heat the oven to 350 degrees. Lightly oil a 9 inch square baking pan.

In a large bowl, mix the flour, 1/2 cup of the sugar, 1/4 cup of the cocoa and the baking powder. Stir in the soy milk and oil, then add the walnuts.

Spread the cake mixture in the baking pan and sprinkle with the remaining 1/2 cup of sugar and 1/4 cup cocoa. Pout the hot water over the entire cake batter.

Bake for 35 to 40 minutes, or until the cake is set and the chocolate sauce is bubbly.

Chocolate Crock Pot Cake

Chocolate Peanut Butter Crock Pot Cake See also: More Vegan Cake Recipes

Ingredients:

  • 1 cup flour
  • 1/2 cup sugar + 3/4 cup
  • 3 tbsp cocoa powder + 1/4 cup
  • 1 1/2 tsp baking powder
  • 1/2 cup soy milk
  • 2 tbsp vegan margarine, melted
  • 1 tsp vanilla
  • 2 cups boiling water
  • 1/2 cup peanut butter

Preparation:

In a large mixing bowl, combine the flour, 1/2 cup sugar, 3 tbsp cocoa powder and baking powder. Whisk in the soy milk, vegan margarine and vanilla and mix until smooth. Pour into a lightly greased crock pot or slow cooker.

Combine the 3/4 cup sugar and 1/4 cup cocoa. In a separate bowl, combine the boiling water and peanut butter and whisk till smooth. Add to the cocoa and sugar mixture and mix until well combined. Pour over the batter in the crock pot.

Cover and cook on high for 2 to 2 1/2 hours, until a knife inserted into the center comes out clean.
