Ramen with Thai Peanut Sauce

Use ramen instead of noodles for a quick, cheap, and budget-friendly meal for vegetarians and vegans. This one is great for college students who love ramen, but get a bit bored of the usual spice packet it comes with. This recipe sure ain't fancy, but it gets the job done, cheap. Be sure to look for a vegetarian ramen package.

Ingredients:

  • 1 package ramen
  • 3/4 cup water
  • 3 tbsp peanut butter
  • 2 tbsp soy sauce
  • 1/2 tsp ginger powder
  • 1 tbsp cider vinegar
  • 1 tbsp sesame oil
  • 1/2 tsp sugar
  • 2-3 green onions, chopped (optional)

Preparation:

Cook the ramen in water for 5 to 7 minutes, or until done. Drain the excess water and add remaining ingredients, stirring until peanut butter is melted and ingredients are well mixed.

Low-Fat Vegan Alfredo Sauce

A low-fat and vegan recipe for alfredo sauce, made with tofu, soymilk and almonds instead of cream and dairy. Two users give this low-fat vegan alfredo five out of five stars, so you know it's a good one.

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp dry white wine
  • 1/3 cup almonds
  • 1/2 block silken tofu (soft), about 6 ounces
  • 1 1/2 cups soy milk
  • 1 tbsp miso
  • 1/2 tsp salt
  • dash nutmeg
  • dash cayenne pepper
  • 1 tbsp fresh parsley, chopped (optional)
  • pepper to taste

Preparation:

Sautee the onion and garlic in olive oil until soft, about 5 minutes. Add the wine, remove from heat, and set aside.

In a blender or food processor, process the almonds until finely ground. Add onion and wine, tofu and miso and process until smooth.

Slowly add soymilk, adding just enough to make the desired consistency. Add salt, nutmeg and pepper, and transfer to saucepan.

Cook over low heat, stirring occasionally, just until heated through. Garnish with parsley and sprinkle a bit of black pepper on top. Serve over pasta.

White cream sauce for pizza

A basic white cream sauce for pizza. Use this white cream sauce to top pizza or pasta. This is a rich, heavy and delicious cream sauce, so very little is needed in order to get a great flavor.

Ingredients:

  • 1 tablespoon butter
  • 3 tablespoons flour
  • 1 1/4 cup cup milk
  • 1/2 tsp garlic powder
  • 1 tsp Italian seasoning (or a blend of basil and oregano)
  • dash salt and pepper, to taste
  • 1/3 cup fresh Parmesan cheese, grated

Preparation:

Melt butter in a medium saucepan and add in flour, stirring until thick and pasty.

Slowly add milk, whisking together constantly to avoid lumps. Add garlic powder, Italian seasoning, salt and pepper and simmer for 3-4 minutes, or until thickened.

Stir in grated Parmesan cheese until welted. Sauce will thicken further as it cools, so add in a bit more milk if needed.

This recipe makes more than enough white sauce for one large pizza.

Portobello burgers with avocado sauce
