Avocado Fudge Recipe

Avocado fudge is a tradition in grower communities such as Fallbrook, California where avocados trees are plentiful in backyards, front yards, and just about everywhere you look. This avocado fudge recipe is rich and creamy, yet dairy-free and suitable for vegans as long as you use a vegan margarine.

Ingredients:

  • 1 avocado, ripened
  • 1/2 cup margarine
  • 1 tsp vanilla
  • 1 cup cocoa
  • 3 cups powdered sugar
  • 1/3 cup chopped walnuts (optional)

Preparation:

In a medium sized saucepan, melt the margarine over low heat.

Once margarine is melted, puree with avocado in food processor or blender until perfectly smooth. Be sure there are no chunks of avocado left!

Return mixture to saucepan over very low heat and aff the rest of the ingredients,except the walnuts, adding the powdered sugar a portion at a time.

Once all the sugar has been added, the mixture should be thick. Add walnuts if desired, and transfer to a loaf pan. Refrigerate until firm. Now, be patient! If you don't let it firm up, you won't be able to slice it up into squares.

With all this talk about avocados, you're probably wondering about how much fat an avocado really has. While it's true that avocados are a fruit and come from nature, they do have a high fat content. There is such a thing as too much of a good thing, of course, so avocados are best enjoyed in moderation. On the plus side, they do provide a lot of fiber! Portobello burgers with avocado sauce

Still loving learning about avocados? I'm still loving eating them! Here's one classic way just about everybody loves avocados: on a veggie burger! This recipe takes a grilled portobello mushroom and adds a creamy avocado sauce for a delicious vegetarian sandwich. Isn't it beautiful? An homage to my favorite fruit, the humble avocado

Obviously, I love good food, or I wouldn't be writing about it all the time, and I often sing the praises of my favorite chocolate desserts, and of course, my favorite grain (quinoa, of course), but it's been a while since I waxed poetic about my favorite fruit. So great a fruit is it, that you might not even consider it a fruit. The humble avocado. So, the next few blog posts will be dedicated to extolling the virtues of avocados, and the many culinary uses it inspires, besides just everybody's favorite, guacamole.

I thought I'd start at the beginning. Before we get started exploring the many ways to enjoy avocados, we need fresh ripe avocadoe. Here's how to choose avocadoes, how to ripen avocadoes and how to cut avocados.
