Vegetarian Cashew Gravy Recipe

Vegetarian Cashew Gravy Recipe

Ingredients:

  • 2 cups water
  • 1/2 cup cashews
  • 2 tbsp cornstarch
  • 2 tbsp onion powder
  • 1/2 tsp salt

Preparation:

Place all the ingredients in a blender and liquify.

In a medium saucepan over medium heat, heat the gravy, stirring constantly, until thick.

Add more water if the gravy becomes too thick.

Crockpot Very Veggie Chili Recipe

With bell peppers, corn, carrots, zucchini and of course beans and tomatoes, you're well on your way to getting your "five a day" servings of vegetables right in one meal. And of course, the best thing about this recipe, is that since it's made in the crockpot, all you have to do it turn on your slow cooker and walk away. Enjoy!

Easy Vegan Pancake Recipe

Yes, it's true, you can make perfectly good pancakes without eggs or even milk! This vegan pancake recipe uses soy milk as a substitute and the result is perfect light and fluffy pancakes. You might also want to try this recipe for vegan blueberry pancakes or a sweet vegan pancake recipe with strawberries. If you're in the mood to try something different, here's a great recipe for vegan apple pecan pancakes. Enjoy!

Prep Time: 5?minutes

Cook Time: 10?minutes

Total Time: 15?minutes

Ingredients:

  • 1 cup flour
  • 1 tbsp sugar
  • 2 tbsp baking powder
  • 1/8 tsp salt
  • 1 cup soy milk
  • 2 tbsp vegetable oil

Preparation:

Combine the flour, sugar, baking powder and salt in a large bowl until well mixed.

Mix in the soy milk and oil and beat together until batter is smooth.

Drop 1/4 cup of batter at a time onto a hot oiled griddle, or well greased frying pan over medium high heat. When bubbles appear on the surface of the pancake, approximately 3 minutes, flip, and cook the other side for another 2 minutes. Enjoy!

Raw Foods Cole Slaw Recipe

Tangy German-style cole slaw recipe for a raw and living foods cabbage salad or "raw slaw". This recipe is suitable for anyone on a raw food diet.

Prep Time: 10?minutes

Total Time: 10?minutes

Ingredients:

  • 1/2 head green cabbage
  • 1/2 head purple cabbage
  • 2 carrots, grated
  • 1/3 cup apple cider vinegar
  • 1 1/2 tsp dry mustard
  • 1/2 cup raw olive or flax seed oil
  • 1/2 tsp agave nectar
  • salt and pepper to taste

Preparation:

Combine cabbage and carrots in a large bowl.

In a separate small bowl whisk together the vinegar, mustard, oil and agave until a creamy dressing forms, and pour over the cabbage and carrots.

Mix until well combined. Add salt and pepper to taste.

Apple Pizza Recipe

Apple pizza is a gourmet fruit pizza recipe made with apples! Try this vegetarian apple pizza for kids or perhaps as a gourmet vegetarian appetizer. Unlike other fruit pizza recipes, this is a savory main dish apple and cheese pizza and not a sweet fruit dessert pizza. This gourmet vegetarian pizza with apples comes from the US Apple Association.

Ingredients:

  • 1 12-ounce can refrigerated ready-made pizza dough
  • 3 large apples, sliced thin
  • 1 cup apple juice
  • 1 tbsp cornstarch
  • 1/2 tsp cinnamon
  • 2 tbsp honey
  • 1/4 cup chopped pecans
  • 1 cup white cheddar cheese

Preparation:

Pre-heat oven to 425 degrees.

Lightly coat a 14-inch pizza pan with cooking spray. Press dough into pizza pan.

Cook apples in apple juice until tender. Drain off juice and reserve.

Place apple slices on dough.

Dissolve cornstarch in apple juice, cinnamon, and honey. Cook over medium heat until clear. Spread sauce over apples.

Sprinkle pecans on top. Top with cheese.

Bake in a 425 degree oven for 15-20 minutes.

Makes 8 slices of apple pizza.

Raw food coconut soup recipe

An easy raw food coconut soup recipe made from a young coconut and Thai spices. Fill it up with as many or as little veggies as you like. Perhaps some shredded greens or baby corn. And of course, you can make this raw Thai coconut soup as spicy as you like by piling on the chili peppers!

Ingredients:

  • 1 young coconut
  • 4 cloves garlic
  • 2 tsp fresh minced ginger or galangal
  • 3 tbsp lime juice
  • 2 tsp cold pressed olive or flax oil
  • 1 tsp curry powder
  • 1 medium tomato
  • 1/4 tsp sea salt
  • 1/2 tsp fresh minced chili, or to taste (I used cayenne pepper)
  • 2 tbsp chopped fresh cilantro
  • diced bell pepper (optional)
  • chopped cherry tomatoes (optional)
  • mushrooms, thinly sliced (optional)

Preparation:

Open the coconut and drain the water into a blender. Scrape out the meat, and add to the blender.

Add garlic, ginger or galangal, lime juice, oil, curry powder, tomato, salt and chili. Blend until smooth and creamy. Adjust seasonings to taste.

Add cilantro and pulse until cilantro is finely minced.

Pour into serving containers and add any chopped veggies you like: bell pepper, tomatoes and thinly sliced mushrooms work well.

This raw coconut soup works well after it's had a chance to chill in the fridge for a couple hours to allow the flavors to set. It'll need a good stirring before serving, however, as the oils and coconut water will tend to separate.

Quick 7 Layer Dip Recipe

Quick 7 Layer Dip Recipe. This classic seven layer dip recipe is a quick and easy vegetarian appetizer, inspired by the flavors of Mexico. You might also want to try this vegan 7 layer dip recipe. Recipe courtesy of Bush's.R Beans.

Ingredients:

  • 1 16 ounce container sour cream
  • 1 package taco seasoning
  • 2 16 ounce cans refried beans
  • 1 16 ounce jar salsa
  • 1/2 cup green onions, chopped
  • 1 large tomato, chopped
  • 2 avocados, diced
  • 2 cups shredded cheese
  • 1 4 ounce can sliced black olives
  • 2 cups shredded lettuce
  • tortilla chips

Preparation:

Mix sour cream and taco seasoning. Chill in fridge for 30 minutes.

In sauce pan, combine vegetarian refried beans and salsa. Heat on medium until evenly blended. Let cool.

Shred lettuce. Dice tomatoes, avocados, and green onions.

Take cooled beans and salsa and spread in 11x13 inch pan. Spread sour cream/taco seasoning mixture over beans. Layer the cheese, olives, lettuce, tomatoes, avocados, and green onions in that order evenly over each ingredient.

Serve your seven layer dip with with tortilla chips.

Easy Spinach Dip Recipe

You can create this quick and easy vegetarian spinach dip with just four very simple ingredients, and in less then five minutes. Although it is best to allow this spinach dip to sit in the refrigerator before serving. A quick and easy spinach dip recipe is perfect for a vegetarian appetizer when served with crackers or vegetables.

Ingredients:

  • 1 box frozen spinach, thawed and drained
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 packet onion soup mix
  • pepper to taste

Preparation:

Mix together all ingredients thoroughly. Chill for at least an hour before serving to allow flavors to mingle. That's it!

Easy Vegan Coconut Rice Recipe

Vegetarian coconut rice is a flavorful side dish that can be eaten on its own or with a stirfry or sauce. The coconut and lemongrass flavors are inspired by traditional Thai recipes, yet this vegan dish has very few ingredients and is a breeze to prepare.

Ingredients:

  • 3 tbsp oil
  • 1/2 onion, diced
  • 3-4 inches lemongrass (optional)
  • 2 cups white rice
  • 2 1/2 cups water
  • 1 14 oz can coconut milk
  • 1/4 cup lightly toasted coconut flakes (optional)

Preparation:

In a large frying pan, sautee the onion in the oil for 3-5 minutes. Add rice and lemongrass and cook for about two minutes, until rice is toasted, stirring frequently and adding more oil if needed.

Carefully add water to rice. Allow to boil before reducing heat and covering. Continue to stir occasionally for about 15 minutes.

Add coconut milk and cook 10-15 more minutes, until rice is cooked through. Remove lemongrass stalks.

Top with toasted coconut flakes, if desired, and enjoy!

Easy Vegan Pumpkin Pie Recipe

Easy Vegan Pumpkin Pie Recipe. A vegan version of the classic pumpkin pie recipe, using tofu as a binder instead of eggs. Sounds too good to be true, doesn't it? Vegan pumpkin pie with tofu is perfect for a vegan Thanksgiving or Halloween, but easy enough to whip up anytime you're craving pumpkin pie. Scroll down for more vegan pumpkin pie recipes.

Ingredients:

  • 3/4 pound silken (soft) tofu
  • 1 16 ounce can pumpkin puree
  • 1 1/2 tsp cinnamon
  • 3/4 tsp ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/3 cup oil
  • 1 tsp vanilla
  • 1 cup brown sugar
  • 1 1/2 tbsp molasses
  • 1 pre-made pie crust

Preparation:

Pre-heat oven to 350 degrees.

Combine all ingredients, except for pie crust, in a food process or blender and process until smooth. Pour into pie crust.

Bake for one hour.

Chill before serving and top with whipped cream or non-dairy whipped cream if desired.

Vegan Skillet Cornbread Recipe

Vegans love cornbread too! Skillet cornbread is a southern favorite. If you're vegan, you don't have to miss out - try this dairy-free and egg-free version of vegan skillet cornbread.

Ingredients:

  • 1 1/2 cups soy milk
  • 2 tsp lemon juice
  • 1 2/3 cup flour
  • 1 cup cornmeal
  • 4 tsp baking powder
  • 3/4 tsp salt
  • 1 jalapeno pepper, diced (or to taste)
  • 1 cup corn
  • 1/2 cup vegetable oil
  • 1/2 cup maple syrup

Preparation:

Pre-heat oven to 375 degrees. Lightly grease a 10-inch skillet. Place in the over to heat it up.

In a small bowl, stir together the soy milk and lemon juice.

In a separate large bowl, combine the flour, cornmeal, baking powder, salt and diced jalapeno peppers.

In a food processor or blender, puree the corn, vegetable oil and maple syrup until smooth and well combined. Add the soymilk and lemon juice, then slowly add to the flour mixture, stirring just until combined.

Pour the batter into the greased skillet, and bake for 25 minutes, or until golden brown. Enjoy your vegan skillet cornbread!

Cornbread Stuffing Recipe

Cornbread Stuffing Recipe. Cornbread stuffing (or dressing) is a Southern favorite served not only on Thanksgiving and holidays, but for any special family meal. This cornbread stuffing recipe is both vegetarian and vegan, just be sure to use a vegan cornbread. See also: More vegetarian stuffing recipes

Ingredients:

  • 1 onion, diced
  • 3 stalks celery, diced
  • 1 tbsp sesame oil
  • 1/2 tsp sage
  • 1/2 tsp thyme
  • 1 tsp parsley
  • salt and pepper to taste
  • 2 cups whole wheat bread, cubed
  • 2 cups corn bread, cubed
  • 1/2 cup vegetable broth

Preparation:

Pre-heat oven to 400 degrees.

Sautee the onion and celery in the sesame oil.

In a large mixing bowl, combine the spices with the bread and vegan cornbread, mixing well. Add the onion and celery and stir to combine.

Add vegetable broth just until moistened, adding more or less as needed.

Bake for 20 minutes.

Avocado Fudge Recipe

Avocado fudge is a tradition in grower communities such as Fallbrook, California where avocados trees are plentiful in backyards, front yards, and just about everywhere you look. This avocado fudge recipe is rich and creamy, yet dairy-free and suitable for vegans as long as you use a vegan margarine.

Ingredients:

  • 1 avocado, ripened
  • 1/2 cup margarine
  • 1 tsp vanilla
  • 1 cup cocoa
  • 3 cups powdered sugar
  • 1/3 cup chopped walnuts (optional)

Preparation:

In a medium sized saucepan, melt the margarine over low heat.

Once margarine is melted, puree with avocado in food processor or blender until perfectly smooth. Be sure there are no chunks of avocado left!

Return mixture to saucepan over very low heat and aff the rest of the ingredients,except the walnuts, adding the powdered sugar a portion at a time.

Once all the sugar has been added, the mixture should be thick. Add walnuts if desired, and transfer to a loaf pan. Refrigerate until firm. Now, be patient! If you don't let it firm up, you won't be able to slice it up into squares.

3. Vegetarian Gravy Recipes

Making a meatless vegetarian gravy is more of an art than an exact science, as timing, stirring and heat are everything, so you'll want to add more or less liquid as needed. Just like with regular gravy, however, your vegetarian gravy will thicken slightly as it cools. Most vegetarian gravy recipes are made from a vegetable broth base instead of pan drippings or animal fat, and many recipes add extra flavor by using mushrooms, fresh herbs, or other flavor enhancers such as miso or nutritional yeast.

10. Pumpkin Recipes

Low-fat Coffee Cake Recipe

This low-fat and vegan coffee cake uses applesauce for moisture and a healthy amount of spices for flavor. Perfect for a weekend vegan brunch.

Prep Time: 10 minutes

Total Time: 10 minutes

Ingredients:

  • 1/4 cup vegan margarine
  • 2 cups applesauce
  • 1 cup flour
  • 1 1/2 cups wheat bran flakes or oat bran
  • 1 cup sugar
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1 cup raisins
  • 1 cup chopped nuts (optional)

Preparation:

Pre-heat oven to 350 degrees and grease the bottom of a 9-inch square baking pan.

In a large saucepan, heat the vegan margarine and applesauce together until margarine is melted. Remove from heat.

Raw Corn Chowder Recipe

This is an easy recipe for a sweet raw foods soup. Raw corn chowder can be prepared in just a few minutes if you have almond milk or cashew milk on hand. This recipe is suitable for those on a raw food diet.

Prep Time: 5 minutes

Total Time: 5 minutes

Ingredients:

  • 2 ears fresh corn
  • 2 cups almond milk or other raw nut milk
  • dash cayenne pepper

Preparation:

In a blender, blend together corn from one ear and the almond milk or other raw nut milk. Add the remaining corn and a dash of cayenne. Refrigerate your raw soup first, if possible, to allow flavors to mingle.
