Easy dinner idea: Quick curried chickpeas

I love chickpeas for a simple meal. They're nutritious and cheap, and if you cook them up as in this recipe, for example, they cook quickly and take on lots of juicy flavor. This quick and easy curried chickpea recipe uses canned ingredients, but has lots of spices to give it a real Indian flavor. Pair it with rice or another healthy whole grain for a simple yet complete entree.

Quick 7 Layer Dip Recipe

Quick 7 Layer Dip Recipe. This classic seven layer dip recipe is a quick and easy vegetarian appetizer, inspired by the flavors of Mexico. You might also want to try this vegan 7 layer dip recipe. Recipe courtesy of Bush's.R Beans.

Ingredients:

  • 1 16 ounce container sour cream
  • 1 package taco seasoning
  • 2 16 ounce cans refried beans
  • 1 16 ounce jar salsa
  • 1/2 cup green onions, chopped
  • 1 large tomato, chopped
  • 2 avocados, diced
  • 2 cups shredded cheese
  • 1 4 ounce can sliced black olives
  • 2 cups shredded lettuce
  • tortilla chips

Preparation:

Mix sour cream and taco seasoning. Chill in fridge for 30 minutes.

In sauce pan, combine vegetarian refried beans and salsa. Heat on medium until evenly blended. Let cool.

Shred lettuce. Dice tomatoes, avocados, and green onions.

Take cooled beans and salsa and spread in 11x13 inch pan. Spread sour cream/taco seasoning mixture over beans. Layer the cheese, olives, lettuce, tomatoes, avocados, and green onions in that order evenly over each ingredient.

Serve your seven layer dip with with tortilla chips.

Quick No-meat-a Fajitas

Quick No-meat-a Vegetarian Fajita recipe courtesy of Lightlife Foods.

Ingredients:

  • 1 package Smart Strips Steak Style
  • 1 green pepper, sliced in strips
  • 1 yellow pepper, sliced in strips
  • 1 onion, sliced
  • 1 tomato, chopped
  • salsa
  • 1 small tub of low fat sour cream or soy sour cream
  • cheddar cheese or soy cheese, shredded
  • Fajita seasoning packet
  • cooking oil or spray
  • 4 flour tortillas

Preparation:

In a small amount of cooking oil or spray, saute the Smart Strips Steak Style and add the fajita seasoning. Set aside in an oven-proof dish or skillet.

Saute the peppers and onions separately for 2 to 4 minutes, mixing often (do not over cook; you want them to be a little crunchy.) Saute each item individually, then add it to the dish with the Steak Strips.

After each item has been added, place dish in a 250 degree oven to keep warm while you prepare the rest of the meal. Dice tomato and set aside.

When everything is ready, heat flour tortillas in the microwave. Set everything out and assemble fajitas.

Serves: 4

Per serving: Fat-16g, Fiber-5g, Sodium-730mg, Carbohydrates-50g, Protein-17g (soy protein 6g), Calories-400.

Quick and Easy Cheesy Pasta

A super quick and easy vegetarian pasta casserole recipe. This is a great way to use up any leftover cooked pasta you have lying around. Just "dump" a few ingredients into a dish and bake. Although you do have to cook the pasta beforehand, this pasta casserole only has five ingredients, so it really can be a time saver on a busy night. Ingredients:

  • 1 16 ounce package penne pasta
  • 1 14.5 ounce can diced tomatoes
  • 2 16 ounce cans kidney beans, drained and rinsed
  • 1 26 ounce jar spaghetti sauce
  • 2 cups shredded mozzarella cheese

Preparation:

Preheat oven to 375 degrees.

Prepare pasta according to package directions. Drain and return to saucepan.

Stir in diced tomatoes, kidney beans and spaghetti sauce. Transfer to 2-quart baking dish and top with shredded mozzarella. Bake until cheese is melted and golden, about 40 minutes.
