Basic Breakfast Burrito

Vegetarian breakfast burritos make for a fun breakfast if you're bored of the usual cereal or pancakes, and kids love them too. This vegetarian breakfast burrito recipe with eggs, salsa and cheese is very basic, so you can always add extra spices or vegetables or whatever you want. This recipe is just for one vegetarian breakfast burrito, so double the amounts if you need to make more.

Ingredients:

  • 2 eggs
  • 2 tbsp milk
  • salt and pepper to taste
  • 1 tbsp vegetable oil or butter or margarine
  • 1/4 cup grated cheddar cheese
  • 2 tbsp salsa
  • 1 flour tortilla

Preparation:

In a small bowl, whisk the eggs togetherwith the milk until well beaten and season with salt and pepper.

Heat the oil or butter in a skillet or frying pan over medium-high heat. Carefully add the eggs. Cook, mixing frequently, until you have scrambled eggs of the desired consistency.

Warm the flour tortilla in the microwave for a few seconds just until warm and soft. Place the scambled eggs in the center of the flour tortilla, and top with cheese and salsa.

Wrap and enjoy your vegetarian breakfast burrito!

Cranberry Date Breakfast Bars

Store-bought cereal bars often have unhealthy additives, so better to make your own healthy homemade cereal bars. These whole wheat and oatmeal breakfast bars are flavored with cranberries and dates. If you like packaged cereal bars, try making these homemade breakfast bars with oatmeal. They're similar to granola bars. Recipe courtesy of The Wheat Foods Council.

Ingredients:

  • 6 ounces dried cranberries
  • 8 ounces chopped dates
  • 1/2 cup water
  • 1 tsp vanilla
  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 2 cups old-fashioned oats
  • 1 cup brown sugar, packed
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter
  • 1/2 cup margarine
  • 1 cup powdered sugar (optional)
  • 1 - 2 tbsp orange juice (optional)
  • 1/4 tsp vanilla (optional)

Preparation:

Pre-heat oven to 350 degrees.

In a saucepan over low heat, simmer cranberries, dates and water, stirring constantly. Simmer until all water is absorbed; remove from heat. Stir in 1 teaspoon of vanilla; set aside.

In a medium bowl, combine whole wheat flour, all-purpose flour, oats, brown sugar, baking soda and salt. Stir in butter or margarine until well blended.

Spread half of the flour mixture into ungreased 9 x 13-inch pan; bake in oven for 8 minutes.

Remove from oven and spoon cranberry/date mixture over crust; sprinkle with remaining flour mixture, pat gently.

Bake 20 to 25 minutes or until lightly browned; cool.

Optional: Combine powdered sugar, vanilla and orange juice to make a frosting. Drizzle over cereal bars.

Servings: Provides 3 dozen bars

Calories/Serving: 155 calories/bar

Nutrition: Nutrition analysis: One bar provides approximately: 155 calories, 2 g protein, 26 g carbohydrates, 2 g fiber, 6 g fat (2 g saturated), 7 mg cholesterol, 10 mcg folate, 1 mg iron and 108 mg sodium.

Healthy Breakfast Burrito

Cereal is boring, try a healthy breakfast burrito instead! Healthy breakfast burritos take just a few minutes to prepare. This healthy breakfast burrito recipe uses eggs and beans for a high-protein vegetarian breakfast boost. Recipe courtesy of Bush'sR Beans.

Ingredients:

  • 6 eggs, lightly beaten
  • 1 tbsp butter
  • salt and fresh ground black pepper
  • 1/4 cup chopped green onion
  • 1 16 ounce can vegetarian baked beans
  • 6 flour torillas (about 7-8 inches, warmed)
  • shredded cheddar cheese (optional)
  • salsa or ketchup

Preparation:

Heat butter in 10-inch non-stick skillet until sizzling.

Season eggs with salt and pepper. Add to skillet. Sprinkle with onions. Cook until eggs are done, stirring occasionally.

Divide egg mixture into 6 parts. Spoon egg mixture and about 1/4 cup beans into warmed tortillas. Sprinkle with cheese and drizzle with salsa, if desired.

Wrap tortillas.

Makes 6 healthy vegetarian breakfast burritos.

Raw food breakfast cereal

A homemade raw foods diet breakfast cereal similar to a healthy muesli or granola cereal with fresh fruit and topped with raw nut milk. This is a wonderfully delicious and healthy breakfast idea for those eating a raw and living foods diet.

It's a wonderful recipe, but to make it truly amazing, add the coconut oil - that's the secret ingredient to make this raw granola museli truly praise-worthy.

Ingredients:

  • 3/4 cup raw nuts
  • about 10 dates, soaked and pitted
  • 2 tbsp coconut oil (optional, but makes it taste really yummy)
  • Fresh fruit (mango, berries or banana works well)
  • 1 tbsp fresh raw grated coconut (optional)
  • Raw nut milk, to taste

Preparation:

Using a food processor, process the nuts and dates and coconut oil together until nuts are almost finely ground. Combine in a bowl with fresh fruit and grated coconut.

Top with nut milk, to taste.

This raw foods muesli is incredibly delicious, so enjoy every mouthwatering bite!
