Grilled paneer cheese

Indian paneer cheese works well on your indoor or outdoor grill, as it chars lightly instead of melting away like other cheeses. In this Indian tandoori-inspired recipe, paneer cheese is coated in a yogurt sauce, smothered in tandoori spices, and grilled on skewers just until lightly charred. Serve it up with extra sauce. Yum!

Ingredients:

  • 1/2 cup plain or lemon yogurt
  • 2 tbsp tandoori seasoning blend
  • 1/4 tsp cayenne pepper, or to taste (optional, if you like your food a bit spicy!)
  • 8 ounces paneer cheese, chopped into 1-inch cubes

Preparation:

Whisk together the yogurt, tandoori spice blend and cayenne pepper. Add diced paneer cheese, coating well with sauce. Allow to marinate for at least one hour.

Pre-heat an indoor or outdoor grill to medium low heat. Skewer paneer on soaked bamboo skewers, and grill for 5-7 minutes, or until lightly charred, coating well with extra sauce.

Serve your grilled paneer drizzled with extra sauce, or serve the extra sauce on the side for dipping.

Curried Grilled Seitan Kebabs

Curried Grilled Seitan Kebabs. A vegetarian and vegan barbecue recipe, perfect for your summer or holiday cookout. This seitan recipe is also Indian inspired, with a strong curry flavor.

Ingredients:

  • 1 1/2 pounds seitan, chopped into 1 inch chunks
  • 2 onions, coarsely chopped
  • 5 bell peppers, any color, chopped into 1 inch chunks
  • 1 cup whole cherry tomatoes
  • 1 cup whole mushrooms
  • 1/3 cup olive oil
  • 3 tbsp sesame oil
  • 1/4 cup curry powder
  • 1 tbsp salt
  • 1 1/2 tsp garlic powder
  • bamboo barbecue skewers

Preparation:

Place the the seitan, onions, peppers, tomatoes, and mushrooms on the bamboo skewers.

In a shallow baking dish or large ziplock back, combine together the olive oil, sesame oil, curry powder, salt and garlic. Marinate the skewered vegetable kebabs for at least 2 hours (longer is fine).

Grill for about 5 minutes on each side, or until done.

Grilled eggplant

A flavorful and spicy grilled eggplant basted with a tangy and sweet Thai-inspired sauce. If you like eggplant, you'll love the simple deliciousness of the Thai-style grilled eggplant - a vegetarian barbecue treat.

Ingredients:

  • 3 cloves garlic
  • 2 tbsp chopped fresh cilantro
  • 1 onion
  • 2 tsp brown sugar
  • 2 tbsp lime juice
  • 1/2 cup chopped fresh basil
  • 2 eggplants

Preparation:

In a food processor or blender, process the garlic, cilantro, onion, sugar, lime juice and basil, adding more liquid as needed.

Slice the eggplant in thick, flat slices and place on grill, basting with the garlic, onions and herbs mixture, reserving half of the mixture.

Allow eggplants to grill for about 15 minutes, or until done.

Top with remaining onion and herb mix and serve hot.

Grilled Pineapple with Coconut

Grilled pineapple and coconut makes for a sweet and exotic barbecue dish, different from the usual vegetarian staples of mushrooms, corn on the cob and veggie burgers! This quick recipe makes for a great vegetarian and vegan dessert or barbecued side dish. With just a hint of rum, this is a grilled dish for adults, but if you're serving kids, you can omit the rum and it's still quite tasty.

Ingredients:

  • 2 tbsp honey or agave nectar
  • 2 tbsp dark rum
  • 1 tsp lemon juice
  • 4 or 5 slices fresh pineapple
  • 1 cup flaked coconut

Preparation:

Whisk together the honey (or agave nectar), rum and lemon juice in a wide dish. Add the pineapple and coat well. Allow the pineapple to marinate for at least one hour in the refrigerator.

Lightly grease your grill and fire up to a medium heat.

Coat the pineapple with coconut on both sides, pressing the coconut into the pineapple to get it to stick.

Grill on both sides for about 8 to 10 minutes.
