Seitan

Definition: Although it is made from wheat, seitan has little in common with flour or bread. Also called “wheat meat”, “wheat gluten” or simply “gluten”, seitan becomes surprisingly similar to the look and texture of meat when cooked, making it a popular meat substitute. Seitan is also high in protein, making it a popular protein source for vegetarians. Asian restaurants often use seitan as a vegetarian mock meat, and seitan is also the base for several commercially available products such as Tofurky deli slices.

Seitan can be prepared by hand using either whole wheat flour or vital wheat gluten and is made by rinsing away the starch in the wheat, leaving a high-protein gluten behind. Although not as common as tofu, seitan is quickly gaining popularity, particularly in vegetarian restaurants, due to its ability to take on the texture and flavor of meat. Prepared seitan can be found in the refrigerated section of most health food stores.

Curried Grilled Seitan Kebabs

Curried Grilled Seitan Kebabs. A vegetarian and vegan barbecue recipe, perfect for your summer or holiday cookout. This seitan recipe is also Indian inspired, with a strong curry flavor.

Ingredients:

  • 1 1/2 pounds seitan, chopped into 1 inch chunks
  • 2 onions, coarsely chopped
  • 5 bell peppers, any color, chopped into 1 inch chunks
  • 1 cup whole cherry tomatoes
  • 1 cup whole mushrooms
  • 1/3 cup olive oil
  • 3 tbsp sesame oil
  • 1/4 cup curry powder
  • 1 tbsp salt
  • 1 1/2 tsp garlic powder
  • bamboo barbecue skewers

Preparation:

Place the the seitan, onions, peppers, tomatoes, and mushrooms on the bamboo skewers.

In a shallow baking dish or large ziplock back, combine together the olive oil, sesame oil, curry powder, salt and garlic. Marinate the skewered vegetable kebabs for at least 2 hours (longer is fine).

Grill for about 5 minutes on each side, or until done.

Crock Pot Seitan Stew Recipe

A vegetarian stew made in the crockpot with seitan as a meat substitute. This vegetarian crock pot recipe uses seitan instead of meat for a classic and hearty "meat" and potatoes stew. Feel free to add a few of your favorite fresh or dried herbs for extra flavor.

Ingredients:

  • 1 pound seitan, chopped
  • 1 onion, diced
  • 5 cups vegetable broth
  • 2 tbsp soy sauce
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 3 carrots, diced
  • 3 potatoes, chopped
  • 2 stalks celery, diced
  • 1 tsp salt
  • 3/4 tsp pepper
  • 4 tbsp cornstarch mixed with 4 tbsp water until smooth
