Award-winning sweet potato veggie burgers

Check out these beautiful sweet potato veggie burgers! When the North Carolina Sweet Potato Commission hosted a recipe contest, vegan blogger Nikki Haney stepped up to the task to create the winning entry - a vegan sweet potato veggie burger. Genius!

Even Oprah's people loved these burgers. Guest judge Kate Rockwood, Senior Editor at O Magazine, said, "This veggie burger rocked because it had a nice crust and firm texture. The sweet potato and kale layered sweet and bitter beautifully, and the onion topping was spot-on. This will be my go-to burger for spring." Congrats, Nikki!

I bet these would be delicious with a bit of barbecue sauce instead of ketchup. My mouth is watering.

Vegan Sweet Potato Kugel

This vegetarian and vegan kugel recipe is cholesterol-free and lower in fat than a traditional kugel with eggs. This recipe is suitable for a vegetarian Passover or for a vegetarian Hanukkah.

Ingredients:

  • 6 small sweet potatoes, peeled and grated
  • 3 apples, peeled and grated
  • 1 cup raisins
  • 1 cup matzo meal
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup chopped walnuts (optional)
  • 1 cup water

Preparation:

Pre-heat oven to 375 degrees.

Use a food processor to grate the sweet potatoes and apples. Combine all ingredients together.

Gently press into a baking dish. Bake for 45 minutes, or until lightly crisp on top.

Vegan Sweet Potato Biscuits

Vegan sweet potato biscuits are a quick and easy egg-free and dairy-free biscuit recipe using pre-cooked sweet potatoes. You could use the canned variety or, if you have any leftover, that would work too. If you've never made biscuits before, you can also watch this quick video to see how easy they can be to make. Perfect for Kwanzaa or anytime.

Ingredients:

  • 1 cup sweet potatoes, pre-cooked and mashed
  • 1 cup flour
  • 1 tbsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp salt
  • 1/4 cup vegetable oil

Preparation:

Pre-heat oven to 375 degrees.

Mash together all the ingredients until well mixed.

Form the dough into 6-7 biscuits and place on a cookie sheet or baking pan. Bake for 15 - 20 minutes, or until done.

Hot German Potato Salad Recipe

This vegetarian and vegan German potato salad with vegetarian mock bacon can be served hot or cold. Vegetarian potato salad always makes a great vegetarian side dish for a picnic, barbecue or everyday. This German potato salad recipe is both vegetarian and vegan. You could also omit the vegetarian bacon and still have a lovely tangy German hot potato salad.

Ingredients:

  • 4 large potatoes
  • water for boiling
  • 1 tbsp vegetable oil
  • 4-5 slices vegetarian mock bacon strips
  • 1 tbsp sugar
  • 1 tbsp flour
  • 1/3 cup water
  • 1/4 cup white wine vinegar (you can substitute cider vinegar if needed)
  • 1/2 tsp mustard
  • 5 scallions (green onions), sliced
  • salt and pepper to taste

Preparation:

Boil the potatoes until just barely tender. Remove from water and allow to cool. Once the potatoes are cool, chop into pieces approximately one inch in size.

In a large skillet, cook the vegetarian bacon in oil until crispy. Crumble into pieces and set the bacon aside. Add the sugar, flour, water, vinegar and mustard to the oil in the skillet. Whisk together over low heat until thick.

Add the potatoes, vegetarian bacon and scallions to the pan and stir to coat the potatoes well. Add a dash of salt and pepper and serve hot or cold as desired.
