Award-winning sweet potato veggie burgers

Check out these beautiful sweet potato veggie burgers! When the North Carolina Sweet Potato Commission hosted a recipe contest, vegan blogger Nikki Haney stepped up to the task to create the winning entry - a vegan sweet potato veggie burger. Genius!

Even Oprah's people loved these burgers. Guest judge Kate Rockwood, Senior Editor at O Magazine, said, "This veggie burger rocked because it had a nice crust and firm texture. The sweet potato and kale layered sweet and bitter beautifully, and the onion topping was spot-on. This will be my go-to burger for spring." Congrats, Nikki!

I bet these would be delicious with a bit of barbecue sauce instead of ketchup. My mouth is watering.

Coconut Sweet Potatoes

A vegan recipe for mashed sweet potatoes with coconut milk instead of dairy milk and butter, making these mashed sweet potatoes dairy-free, cholesterol-free and healthier than many other mashed sweet potato recipes. An easy way to create a unique and flavorful mashed potatoes or sweet potato dish for a vegetarian Thanksgiving, Kwanzaa, or for any time you need a quick vegetarian potato recipe.

Ingredients:

  • 5 or 6 large sweet potatoes or yams, chopped
  • water for boiling
  • 1 14 ounce can coconut milk
  • 3/4 tsp ginger
  • 1/2 tsp curry
  • 2 tbsp olive oil or vegan margarine
  • salt and pepper to taste

Preparation:

In a large pot, cover the yams or sweet potatoes with water and bring to a boil. Allow to simmer for at least 15 minutes, or until soft.

Mash the sweet potatoes to desired consistency and add remaining ingredients.

Sweet Mexican Tortilla Chips

These baked tortilla chips sweetened with sugar and a touch of cinnamon are a sweet treat that kids and adults alike will love, and they take just a few minutes to prepare. Cinnamon tortilla chips are a great after-school snack for the kids along with a fresh fruit salsa, or, serve them up at a Cinco de Mayo party.

Sweet Butternut Squash

Sweet Cranberry Stuffing

Depending on where you're from you may call it stuffing or dressing, but whatever it is, no a Thanksgiving meal isn't complete without it! If you're vegetarian or vegan, this sweet cranberry stuffing recipe is a great way to add a bit of color and Thanksgiving flavor to your stuffing. I love making stuffing because the aroma in the kitchen is simply heavenly, and this recipe is no exception! See also: More vegetarian stuffing recipes

Ingredients:

  • 14 slices bread, lightly toasted or pre-dried, chopped into cubes or crumbles
  • 1 1/2 cups dried cranberries
  • 2 1/2 cups apple juice
  • 1 red onion, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 2 tbsp vegan margarine
  • 1 tsp thyme
  • 1/2 tsp sage
  • 1 tbsp dried parsley (or 2 tbsp fresh, chopped)
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/4 tsp ginger
  • 1/4 tsp cinnamon

Preparation:

Pre-heat over to 350 degrees.

In a small bowl, pour apple juice over cranberries and set aside.

In a large skillet, sautee the onion, celery and garlic in the vegan margarine until soft, 3-5 minutes. Add thyme, sage and parsley and sautee for one more minute.

In a large bowl, combine bread, onions and celery, and cranberries and apple juice, stirring to combine well.

Bake for 20-25 minutes. Add additional spices, if desired, and enjoy!

Vegan Sweet Potato Kugel

This vegetarian and vegan kugel recipe is cholesterol-free and lower in fat than a traditional kugel with eggs. This recipe is suitable for a vegetarian Passover or for a vegetarian Hanukkah.

Ingredients:

  • 6 small sweet potatoes, peeled and grated
  • 3 apples, peeled and grated
  • 1 cup raisins
  • 1 cup matzo meal
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup chopped walnuts (optional)
  • 1 cup water

Preparation:

Pre-heat oven to 375 degrees.

Use a food processor to grate the sweet potatoes and apples. Combine all ingredients together.

Gently press into a baking dish. Bake for 45 minutes, or until lightly crisp on top.

Vegan Sweet Potato Biscuits

Vegan sweet potato biscuits are a quick and easy egg-free and dairy-free biscuit recipe using pre-cooked sweet potatoes. You could use the canned variety or, if you have any leftover, that would work too. If you've never made biscuits before, you can also watch this quick video to see how easy they can be to make. Perfect for Kwanzaa or anytime.

Ingredients:

  • 1 cup sweet potatoes, pre-cooked and mashed
  • 1 cup flour
  • 1 tbsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp salt
  • 1/4 cup vegetable oil

Preparation:

Pre-heat oven to 375 degrees.

Mash together all the ingredients until well mixed.

Form the dough into 6-7 biscuits and place on a cookie sheet or baking pan. Bake for 15 - 20 minutes, or until done.
