This is one of those super-quick and easy vegan dessert recipes that you think will taste funny, but are absolutely decadent. Peanut butter pie with tofu is a relatively healthy vegan dessert perfect for the kids (or the kids-at-heart!). The vegan baker extraordinaire behind the Veganmouse blog made this peanut butter pie and topped it with pretzels, chocolate and extra peanut butter for a rich and gooey treat. Ingredients:
- 16 ounces soft (silken) tofu
- 1 cup creamy peanut butter
- 3/4 cup sugar
- 2 tbsp soy milk
- 2 tsp vanilla
- 1 pre-made pie crust
Preparation:
Combine the tofu, peanut butter, sugar, soy milk and vanilla in a food processor or blender and blend until smooth.
Spoon into the pie shell. Refrigerate at least 2 hours and serve.
