You can get this easy vegetarian meatloaf into the oven in just a few minutes, leaving you plenty of time to cook up an impressive side dish or dessert!
Nature's burger is usually used to prepare quick veggie burger patties, but it makes an excellent easy vegetarian meat-loaf base too.
Ingredients:
- 1 box Nature's Burger veggie burger mix (about 1 1/4 cups)
- 1 egg
- 1 cup water
- 1/2 cup bread crumbs
- 1/2 onion, chopped
- 1/2 green pepper, chopped
- dash vegetarian Worchestershire sauce (optional)
Preparation:
Mix together all ingredients including Nature's Burger mix and press gently into a lightly greased loaf pan.
Bake for 45 minutes at 350 degrees.

I have now tried this recipe twice. I replaced the Egg with Vegetarian Egg Substitutes. I am Vegan. Anyway, The first time I made it I followed directions exactly and it came out too crumbly on the bottom and a bit on the outer sides. I increased to Egg Substitute to equal two eggs, and added 1/4 cup more water. I baked it and it turned out great. I also added Chili Powder to it, and used Catsup instead of The vegetarian Worchestershire sauce. I also topped the loaf with Catsup. It tasted so much better as well as being more solid instead of crumbly.
